This is a super Easy Feta Quinoa Salad Recipe and gets made on repeat during the spring and summer months around here!

It just has a garden fresh delicious taste to it!
We enjoy it as a side dish for tacos, my kids love to eat it with corn chips for a healthy lunch, and we have also been known to eat it as a main dish! The nutritious ingredients and great taste make it worth making this recipe on repeat.
I know during Spring and Summer months, I am ALWAYS looking for salad recipes, especially ones that I can make and have two to three times in a week. This is a great recipe for those hot days when running the stove or the oven is the last thing you want to have to do!
What Kind Of Quinoa
I have always used white quinoa however, red quinoa would work just as well. Just use what you have on hand or whatever kind you prefer.
Easy Feta Quinoa Salad Recipe
Ingredients
- 4 c. Cooked Cooled Quinoa In a medium saucepan, 2 cups of Quinoa to 4 cups of water. bring to a boil and then put it on low heat for 15-20 minutes and until fully cooked. Cool for 2-3 hours in the refrigerator before using
- 1/2 medium red onion chopped finely
- 25 cherry tomatoes sliced in quarters
- 2 large handfuls of fresh baby spinach
- 1/2 cup Feta Cheese for a vegan version you can either omit this your use vegan feta
- 1/2 tsp cilantro optional
- 1/4 cup organic lemon juice
- 1/4 extra virgin olive oil and fresh ground pepper
Instructions
- In a large bowl add your quinoa, red onion, tomatoes, spinach, and feta cheese
- In a small bowl, whisk your lemon juice and olive oil together
- Pour olive oil and lemon juice over salad and toss
- Add salt and pepper to taste
- Store leftovers in an airtight container for up to 5 days!
Non-Dairy Option
This definitely could be a vegetarian salad or a vegan salad. I have made it as a vegan feta recipe and it tastes AMAZING!
The easy substitutions are definitely a perk about this simple quinoa salad, it is very versatile.
What kind of oil to use?
You can certainly use Avocado oil, however, I really think that Olive Oil brings out an amazing flavor in this recipe.
Can you use other tomato substitutions?
Of course! You can use whatever you have on hand, for this simple salad. The cherry tomatoes are just our favorite taste-wise.
Warm Quinoa Salad Bowl With Feta *Optional*
If you prefer you can make this recipe with warm quinoa and add grilled chicken to it. This is a great healthy option for if you want it as a main dish!
