We all love those healthy comfort food recipes and chicken pot pie at least for me is one of those!
I remember years ago before I really started creating my own healthy recipes, I honestly hated the word health. Everything that I associated with health just seemed tasteless and worthless to me…
Then I decided to challenge myself, to take all comfort foods, and start creating healthier versions of them. I have never looked back and this best healthy homemade chicken pot pie is one of my favorite recipes.

I promise, your entire family will probably LOVE this recipe!
For so long, I could not find a good healthy homemade pie crust. When I finally tried this perfectly flaky crust I knew we were meant for each other, and it will probably end up on recipe cards passed down for generations to come!
Bold Disclaimer!
I do not claim to always have the prettiest pies. However, you can more often than not guarantee they will taste AMAZING! Just don’t go judging the way my pie looks, I am still a work in progress when it comes to the perfect classic chicken pot pie look. Haha!
Hot Water Or Cold Water In Pie Crust
SUPER cold ice water is best for this pie crust recipe, and most pie crust recipes are at that.
I will usually put ice in a glass of water and leave it set while I mix the butter and whole wheat flour together.
You just want to have all the ingredients as cold as possible!
If you are feeling up to it you could even replace the water with cold fresh milk.
Instant Pot Broth
Yes, you can buy chicken broth for sure, however, if you don’t have it on hand… If you do have some extra chicken bones hanging around. Toss those bones in an instant pot, and add 3-4 quarts of water depending on the size of your instant pot… Add some chopped onions, garlic, carrots, and celery…
Just all the things you want in your broth.
Turn it on to the pressure cook setting, for 45 minutes and you have a chicken broth with a delicious flavor for your chicken pot pie filling.
Food Processor Or Dough Mixer

What Kind Of Chicken To Use
For this recipe I use leftover chicken, technically if you are super tight on time, you can even use a rotisserie chicken.
The most important thing here is that you have cooked chicken. Sometimes, I just bake skinless chicken breast in the oven. Other times I will do a whole chicken in a slow cooker crock pot, or even using the instant pot!
An amazing pro to this traditional recipe is that more often than not you could just use leftover chicken from another meal, that is mostly how I get the chicken for this recipe!
What you will need for this “Best Healthy Homemade Chicken Pot Pie Recipe”

This healthy chicken pot pie recipe makes either 1 large pie or two small pies. I usually make the larger ones because of the number of people I feed.
Ingredients:
4-5 medium potatoes chopped
1 yellow onion
4 carrots peeled and slices
Olive Oil
Salt
Pepper
Garlic powder
Directions for roasted veggies:
- Finely, chop all the above ingredients
- Toss with olive oil salt to taste, some pepper, and some garlic powder
- Place on a large baking sheet pan or two smaller ones
- Roast in the oven at 425ºF for about 45 minutes stirring every 15 minutes
- You want the veggies to all be tender so a fork can go through them.
While that is roasting, you will need:
2 cups of chopped chicken or even leftover turkey
2 cups shredded cheddar cheese
4 cups of chicken bone broth
4 Tbs Butter
3/4 cup whole grain flour (I add more flour to this to give the filling a more creamy texture than just regular gravy
1 tsp. salt
Directions:
- In a 2-quart saucepan or a large cast iron skillet on medium heat (I use a 12-inch large skillet for the recipe)
- Add your butter to the pan
- Once it is melted, add your whole-grain flour (honestly, I have used all kinds)
- The flour will quickly soak up the butter so be sure to have your bone broth completely ready to go
- Pour in the bone broth whisking well, you don’t want it to burn so watch closely.
- It should take about 3-5 minutes to really start thickening
Best Healthy Homemade Chicken Pot Pie
Ingredients
- Ingredients:

- 2 cups shredded cheddar cheese

- 3/4 cup whole grain flour (I add more flour to this to give the filling a more creamy texture than just regular gravy
- 1 tsp. salt
Instructions
- After your pie crust is ready pour chicken mixture into the pie crust!
- Cover with top crust,
- Whisk an egg yolk and a little water and then using a pastry brush spread evenly on top of the pie crust.
- Bake at 350ºF for 35 minutes or until the top is slightly golden brown
- That is it!!! I just gave you the recipe for the best chicken pot pie, with all-natural ingredients!

Time to grab those roasted Veggies
- Stir in as many as you think will fit into your creamy sauce (I did have some leftover pot pie filling but, my kids ate it up. (The creamy filling makes a great healthy chicken pot pie soup too!)
- Add in your cheddar cheese and then combine chicken into the mixture.

Buttery Healthy Pie Crust Recipe
I have read over SO many classic chicken pot pie recipes and after trying MANY pie doughs this SUPER simple pie dough recipe beat all!
2 1/2 cups whole grain flour (soft wheat works well but, I have used all kinds of whole grains) just use what you have on hand
12 Tbs COLD butter chopped or shredded
1 tsp salt
6-7 Tbs iced cold water
- Mix the flour, butter, and salt until the butter is well combined
- You can do this in the food processor or with a dough hand mixer
- Once it is fully mixed, add your super-cold water
- Add water slowing until your dough has the pie crust texture not too wet and not too dry
- Wrap in plastic wrap and place in the refrigerator for 1 hour or so.
- For the bottom crust, I use the whole thing, if I am making a large pie, for the top crust I use only half of this recipe.
- Roll out your bottom pie crust first and get it in the pie dish
- Using a fork, poke holes in the bottom so the pie crust doesn’t get air bubbles in the pan
- Bake the bottom crust at 350ºF for 8-10 min

We made this last night! Very good! I was confused about a few things. The main one was how much crust to make for this recipe. I made 1 recipe for the bottom plus 1/2 for the top? Seems like it was likely too much, as it was quite thick, but I wasn’t sure how to interpret the instructions, particularly this step “For the bottom crust, I use the whole thing, if I am making a large pie, for the top crust I use only half of this recipe.” Any suggestions would be awesome. The filing was great! Loved how nice the texture got! Love being able to make yummy things with fresh milled flour! Thanks so much!
