Easy Feta Quinoa Salad Recipe

Ingredients

  • 4 c. Cooked Cooled Quinoa In a medium saucepan, 2 cups of Quinoa to 4 cups of water. bring to a boil and then put it on low heat for 15-20 minutes and until fully cooked. Cool for 2-3 hours in the refrigerator before using
  • 1/2 medium red onion chopped finely
  • 25 cherry tomatoes sliced in quarters
  • 2 large handfuls of fresh baby spinach
  • 1/2 cup Feta Cheese for a vegan version you can either omit this your use vegan feta
  • 1/2 tsp cilantro optional
  • 1/4 cup organic lemon juice
  • 1/4 extra virgin olive oil and fresh ground pepper

Instructions

  • In a large bowl add your quinoa, red onion, tomatoes, spinach, and feta cheese
  • In a small bowl, whisk your lemon juice and olive oil together
  • Pour olive oil and lemon juice over salad and toss
  • Add salt and pepper to taste
  • Store leftovers in an airtight container for up to 5 days!
