This Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe is such a delicious breakfast. They are healthy and easy to make!

I really wanted a whole foods version with every bit of the ingredients that I want to feed my family, so this final recipe is what we came up with, and it is a hearty breakfast that everyone approves of!

What are the Benefits Of Cauliflower?

The benefits of cauliflower are a big reason this whole food ingredient will always have a place in my kitchen to add to recipes from time to time. 

  1.  Cauliflower is a great source of fiber
  2. Anti-inflammatory 
  3. Anti-aging properties
  4. High nutrient density 
  5. It is high in vitamin C and vitamin K
  6. It supports healthy cell growth which is essential during pregnancy

Though you won’t see me overusing any whole food ingredient in my kitchen, whole foods like this like I said, will always have a place. 

What does the cauliflower taste like in this Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe?

You cannot even tell. Cauliflower is SO easy to hide in foods, my kids NEVER know when or where I put it. 

We made this Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe for some of our guests, and they thought the cauliflower rice was hash browns. 

I mix cauliflower rice in all kinds of things, rice, soups, and breakfast burritos.

Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe

Ingredients

  • 1 lb. of sausage of choice
  • 12 eggs
  • 2 Tbs. butter
  • 2 Tbs. olive oil
  • 1 12 oz bag frozen cauliflower rice or steamed cauliflower that you rice at home.
  • 1 tsp. salt
  • 1 tsp. black pepper
  • 1 c. cottage cheese
  • 1 1/2 c. sharp cheddar cheese

Instructions

  • On medium-high heat using a large skillet, cook your sausage in olive oil.
  • While your sausage is cooking, steam your cauliflower rice, you want it nice and tender.
  • In a large bowl whisk your eggs together.
  • Shred your cheddar cheese and set it aside.
  • Once your sausage is cooked, add the steamed cauliflower rice make sure you have a large enough skillet if not, switch to a pan that can hold all the ingredients you will be quickly adding now.
  • Add your salt and pepper.
  • Turn your temperature to medium heat and add the butter let it start to melt in a bit.
  • Pour in your egg mixture, the best way to add your egg is to do it slowly.
  • Once the eggs are cooked turn off the heat.
  • While it is still extremely hot add your sharp cheddar cheese and your cottage cheese.
  • Mix well until the cheddar cheese is fully melted in.
  • Now it is time to grab your flour tortilla and start making your breakfast breakfast burritos.
  • Serve with your favorite hot sauce!

Can I substitute with hash browns instead of using cauliflower?

Yes, you can. Just make sure they are cooked and finely chopped like cauliflower rice. 

You can even turn it into a breakfast casserole by adding it to a 9×13 dish, covering it with a little more cheese, and baking it for 10 minutes or until golden brown at 375ºF.

What Kind Of Meat For Breakfast Sausage?

I usually use ground turkey sausage for this Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe… However, you can use beef sausage, lamb sausage, or chicken sausage. Just, whatever you use make sure it will benefit your health. That is kind of my rule of thumb for any ingredients I use. 

Can this be eaten as a breakfast bowl?

Yes, yes, yes! 

There are times when I skip the tortilla altogether and just eat this as a breakfast burrito bowls hash, add some pico de gallo sauce or your favorite hot sauce and life is good!

Can these work as make-ahead breakfast burritos?

Yes! Who doesn’t love having meal prep out of the way for busy mornings? Making this Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe, the night before is a great way to have a healthy easy breakfast ready. 

This Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe also tastes SO good the longer it sits, I am not going to say fresh isn’t equally as good but, they stay delicious if you want to make them ahead. 

Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe

Ingredients

1 lb. of sausage of choice

How to store this Cauliflower Egg Sausage And Cheese Breakfast Burrito Recipe.

This recipe makes a large batch, I kept the recipe this way because the leftovers are totally worth it, you can easily turn them into freezer breakfast burritos with the leftovers.

You can either store the mixture in an airtight container and put it in the refrigerator and it will last up to a week. Your other option is to store them as make ahead burritos by adding the mixture to the center of each tortilla, folding them up burrito style, and freezing them. 

You can heat them in a toaster oven or your main oven at 350ºF until warm all the way through.
