Best Healthy Whole Grain Banana Muffins Recipe

Ingredients

  • 1 3/4 cup. whole wheat flour
  • 1 tsp. baking powder
  • 1/2 tps salt
  • 3/4 tsp. cinnamon
  • 1/3 c. avocado oil
  • 1/2 c. honey
  • 2 eggs
  • 3 mashed bananas
  • 1/4 c. hot water
  • 1/2 c. chopped nuts optional

Instructions

  • Preheat oven to 325ºF
  • Start by preparing your mashed bananas and set aside.
  • In a large bowl, add your whole grain flour, baking powder, salt, and cinnamon, and mix all your dry ingredients well.
  • In a medium bowl, mix your eggs, oil, honey, and water.
  • Once you mix the wet ingredients together, add your mashed banana and mix well.
  • Pour your wet ingredients into your dry ingredients and gently fold them together until it is well mixed.
  • If you are using nuts or chocolate chips you can fold them into your batter now.
  • Line or grease your muffin tin and fill each one 2/3 of the way up.
  • Bake for 28-30 minutes or until fully cooked.
  • Let cool on a wire rack until room temperature.
  • Enjoy!

Notes

Loaf pan directions:
If doing a loaf pan, pour your batter into a 5x9 greased dish and bake at @325ºF for 55-60 minutes or until fully cooked.
